Im not vegan but you can make a vegan Japanese curry really easy.
I usually buy this curry bouillon pack from Mitsuwa or Nijiya or any Japanese/Asian market.

You just cook the vegetables(onions, carrots, and potatoes are standard) you want and/or meat then add water, bring to a boil, add the bouillon cubes, cook on low heat and thats it. You can eat it with steamed white rice and its fucking awesome.
Ive added french fries, eggplant, hot dogs, cocktail weeniers with the cheese inside and cheese to the curry. You can add any kind of vegetable, seafood, or meat.
