i love quinoa, but you might be discouraged if you eat it by itself on your first try. it's excellent to use as stuffing material for tomato/peppers/etc. add a little tomato sauce and/or tahini and sauteed mushrooms/onions/spinach too.
i make a pretty excellent quinoa lasagna.
